1. Veggie-Packed Ranch-Style Dip

Ingredients:

  • 1/2 cup onion

  • 1 cup cauliflower

  • 1/2 cup mushrooms

  • 1/2 cup celery

  • 1 garlic clove

  • 1 tbsp salt-free seasonings

Directions:

  1. Boil the vegetables in 4 cups of low-sodium chicken broth.

  2. Blend the vegetables with 1/2 cup of the boiled broth, add seasonings.

  3. Serve with your favorite non-starchy vegetables to dip (peppers, tomatoes, celery, cucumber, etc.).

2. Green Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 onion

  • 2 garlic cloves

  • 2 tsp minced ginger

  • 4 cups vegetable broth

  • 2 cups broccoli

  • 4 cups of spinach or kale

Directions:

  1. Heat olive oil in a pot over medium heat, sauté onion, garlic, and ginger.

  2. Add broth with broccoli and simmer for 5-10 minutes. Stir in spinach/kale and cook for another 10 minutes.

  3. Transfer to a blender or use a hand blender to puree.

3. Fresh Garden Salad

Ingredients:

  • 1 tbsp. olive oil

  • 2 tbsp. of lemon juice

  • 1/2 garlic clove

  • 1 cup lettuce

  • 1/2 cup veggies: cucumber, onion,
    carrot, radish, mushrooms, etc.

  • 2 boiled eggs or 3 oz. lean meat (optional)

Directions:

  1. Combine the olive oil, lemon juice, and garlic to make the dressings.

  2. Wash and cut vegetables.

  3. Combine the salad with the dressings.

4. Add Flavors to Your Shake

Chocolate mint:

  • Chocolate shake

  • 1/4 tsp mint extract

Vanilla cinnamon

  • Vanilla shake

  • 1/4 tsp cinnamon

Frappuccino

  • Chocolate shake

  • 1 tbsp. instant coffee

Raspberry delight

  • Vanilla shake

  • 1 sachet raspberry Crystal Light (sugar-free)
